Pork Fillets wrapped in Bacon


4-5 Servings

  • 2 reasonably big pork fillets, cut halfway through lengthwise, to open them up
  • salt and pepper to taste]
  • 4 – 5 slices of smoked ham
  • 85 – 125 ml grated mozzarella or any other cheese of your choice
  • 125 mixed, chopped sage and celery leaves
  • 8 rashers of streaky bacon
  • roasted baby beetroot and potatoes for serving

Pre-heat the oven to 180°C. Season the pork with salt and pepper and flatten slightly with a mallet if necessary.

Place the ham slices on top of the one fillet. Combine cheese, sage and celery and spoon on top of the ham slices. Place the other pork fillet on top.

Wrap bacon rashers around the fillets and bake in the oven for 30 – 40 minutes, or until the fillets are just cooked through. Slice against the grain and serve with baby beetroot and small potatoes.
